Florida Grapefruit Granola

Grapefruits are a great source of vitamin C and have antioxidant properties. Good for lowering cholesteral, these citrus fruits are low on the glycemic index, helping the body's metabolism to burn fat. Add granola to your grapefruit to make it a tasty, healthy start to the day

The rolled oats and honey in granola will help sweeten the grapefruit and add a delicious crunch - and the recipe couldn't be more simple

Florida Grapefruit Granola

Serves 6

You will need:

  • 250g jumbo oats
  • 200ml runny honey
  • 4 tbsp sunflower oil
  • 250g unsalted mixed nuts
  • 100g dried cranberries or sour cherries
  • 2 Florida grapefruits

Method:

Step 1: Preheat the oven to 160/gas 3. 

Step 2: Place the oats into a large bowl.  Heat the honey and sunflower oil together until mixed and pour the mixture over the oats. 

Step 3: Stir well until all the oats are coated and then scatter them in an even layer over a large non-stick baking sheet.  Bake for 40 minutes. 

Step 4: Remove the tray from the oven and stir in the nuts.  Bake for a further 10 minutes or so, until the mixture is golden.  Leave to cool and then stir in the cranberries or sour cherries.

Step 5: Peel the grapefruits and carefully remove the segments with a sharp knife.  Toss half the segments gently through the granola. 

Step 6: Serve in bowls, with the remaining grapefruits segments on top.
