Blackcurrant Sorbet
With summer on its way, what better way to enjoy the hot weather but with a refreshing and healthy sorbet? Sorbet makes a delicious alternative to icecream which can be high in fat, and just like smoothies is an excellent way to get fruit into your child's diet.

my child has teamed up with The Blackcurrant Foundation to bring you this divine Blackcurrant Sorbet recipe.Blackcurrants are amongst some of the richest naturally occurring sources of Vitamin C, and are packed full of powerful disease-fighting antioxidants. They also taste fantastic and kids love them.
You will need:
- 4 cups blackcurrants
- 2 tablespoons Orange juice (juice of approx. 1 orange)
- 1 cup sugar
- 1.25 cups water
Method:
Heat the water until boiling and dissolve sugar. Keep on low heat for two minutes, then remove and leave to cool
Use a blender or food processor to puree the blackcurrants. Sieve the puree to remove pips to leave a smooth mixture
Mix puree with orange juice, then with sugar solution to form a smooth mixture
Place mixture in lidded container in freezer for 2-3 hours
Remove from freezer and beat again or if available use a handheld blender
Return to freezer until set. Serve in scoops.
